Lechón asado
A whole pig marinated and roasted for hours over charcoal on a turning spit until the skin turns to crackling. It is the dish of holidays and of mountain weekends. Lechoneras sell it by weight and you order by cut, asking for cuero if you want the skin.
Example
In Guavate you order a pound of lechon with pigeon pea rice and eat at a long table with live music next to you.

Frequently asked questions
What is the best day to eat lechon?
Sunday has the best atmosphere and the fastest turnover of fresh pork. Midweek is quieter, but check opening hours first.
Which cut should I order?
Ask for a mix with some skin. Lean meat alone can dry out and the crackling is half the point.
