Jibarito
A sandwich that swaps bread for two large flattened plantains, with meat, cheese, lettuce and tomato in between. Its documented origin is a Puerto Rican restaurant in Chicago in the nineties, and from there it spread to the island. It is now on menus across Puerto Rico and it is the obvious choice for anyone avoiding gluten.
Example
A skirt steak jibarito is how you eat beef and plantain with your hands and no cutlery.

Frequently asked questions
Is the jibarito a traditional island dish?
It is recent. It was born in the Puerto Rican community of Chicago and traveled back, and it is now standard on island menus.
Is it gluten free?
The bread is replaced by plantain, so the base is. Check the filling and the shared fryer with the restaurant.
