Jibarito
A sandwich that swaps bread for two large flattened plantains, with meat, cheese, lettuce and tomato in between. Its documented origin is a Puerto Rican restaurant in Chicago in the nineties, and from there it spread to the island. It is now on menus across Puerto Rico and it is the obvious choice for anyone avoiding gluten.
