Lechonera
A roadside restaurant built around roast pork, almost always cafeteria style with communal tables. The meat is carved in front of you and weighed, with sides ordered separately. The best known ones are up in the mountains around Guavate and they fill up on weekends.

A lechonera charges by weight, so you can order half a pound and taste rather than commit to a full plate.
