Bacalaíto
A wide flat fritter of batter and shredded salt cod, fried until the edges turn thin and crisp. Along with the alcapurria it is the most recognizable fritter on the island. At kiosks it comes out the size of a plate and gets shared.
Exemple
A fresh bacalaito cracks when you break it and leaves an oil stain on the paper, which is exactly how it should be.
