Mojo isleño
A sauce of tomato, onion, olives, capers and peppers served over fried fish. It is associated above all with the coast of Salinas in the south, where it counts as a signature dish. Do not confuse it with the plain garlic mojo that comes with tostones.
Beispiel
A whole fried red snapper under mojo isleno with tostones on the side is the classic meal at a south coast seaside spot.
